Induction cooktops heat pots and pans directly instead of using an electric or gas-heated element. Induction heating can boil water up to 50 percent faster than gas or electric burners (see note 1) and maintains a consistent and precise temperature. The cooking surface stays relatively cool, so spills, splatters, and occasional boil-overs do not burn onto the cooktop surface. Therefore, spillover cleanup is quick and easy.

Note: Reference (50% faster): When comparing a 9″ induction heating element compared to a 3,000W electric element, a 6-quart capacity 10″ diameter pot to heat 1 quart of water at 70 degrees. A second comparison was performed using a 9″ induction heating element compared to an 18,000 BTU gas burner, a 6-quart capacity 10″ diameter pot to heat 1 quart of water at 70 degrees.
